I love being able to cook something and stretch it into 2 meals. It is one of the best time saving, energy saving and money saving things you can do with your groceries. I did this twice this week!
First I browned a pound of sausage. The first night I topped our pizza with it. The second night I made hashbrown casserole with the other half. Yes, I stretched 1 pound of meat into 2 meals for 6 people.
Second I made a huge batch of fried chicken tenderloins. We had them for dinner last night, lunch today and I froze enough for another meal in a few weeks. Yum! And I only had to clean up the mess one time! Anything I can do to make meal prep easier works for me.
