Yesterday I spent a good chunk of time in the kitchen getting ready for the week and it felt so good! I cooked a good dinner, chopped veggies for school lunches, made muffins for breakfast, made a double batch of meatballs (= 3 meals), and squeezed a bag of lemons and froze it in cubes. It was a very successful day! I find when I can get ahead on the weekends a bit then my weeks go much easier. Did anyone else have a kitchen day this weekend?

I did the same thing Jennifer. It is such a blessing to me and my family when I do this. I was able to make a loaf of bread, bread machine buttery rolls, muffins for this weeks breakfasts, and pumpkin waffles. I also made dinner. I am totally with you with it making the week go along at a smoother and less stressful pace. I am trying to do this each weekend. It doesn’t always work out, but with all of the kids activities, it really helps out!
I try to have some kitchen ‘time’ every weekend to prepare for the week ahead … if I know it’s going to be busy at the office, I’m all over the kitchen on Sunday prepping away …
I do a lot on the weekends, but need to have a pure “kitchen day” so I can get more baking done, and i’d like to try “freezer meals” sometime too! A day in the kitchen isn’t something that i’d classify as “fun” per say, but definitely productive and necessary!
