
A month or so ago, I grabbed a bag of browned ground beef from the freezer, intending to make tacos. I dumped it in the pan to heat and realized there was no way it would feed us the amount was so small. Thinking quickly I decided to finish off a bottle of BBQ sauce. I mixed up a batch of foccacia bread dough and divided it into a muffin tin. After the beef was mixed with the BBQ sauce I spooned it on top of the dough, pushing down a little with the spoon. For most of them I topped with a small bit of shredded cheddar cheese.

After baking for 20 minutes they look like this. Delicious! As we enjoyed our dinner we tried to come up with a name for this creation. After rejecting Fluffs, we decided on BBQ Beef Puffs. Tonight I made them again, specifically reserving some browned ground beef from a meal earlier this week. They were even better the second time. Enjoy!

I've made something similar using canned biscuits for the crust. They're a favorite here too...infact, my 12 yo asked me to make them recently... I need to brown some meat!

I use the canned biscuits too - we call ours BBQ biscuits and my friends at work absolutely love them and request them when we have a casserole pot luck at work!
The cheap canned biscuits seem to work better!
