Easy, delicious chicken

A couple of weeks ago I purchased some of the Lawry marinades for very close to free, I can't remember exactly. I also purchased boneless, skinless chicken in the same trip and when I got home, was wondering what to do with both items. Kevin loves chicken, I think it is all right, and besides a few dishes that I love, I never know what to do with it. We have it about once a week and each time as it is thawing on the counter, I am trying to figure out what to do with it.

The idea struck me to go ahead and package up the chicken with the marinade and THEN freeze it. Then it would be in there ready to use, and I wouldn't have to wonder what to do with the chicken. So I trimmed the fat off the chicken, put it in gallon size bags and poured in about 1/3 of a bottle of marinade. I did one with a teriyaki flavor and one with a lemon pepper flavor.

Yesterday morning I pulled out the chicken teriyaki and let me tell you, this was the most delicious chicken I have had in a long time! You are always supposed to marinade your meat for a while before cooking, but I never seemed to have the time. The flavor was always lacking. Not doing it this way though! The chicken soaked up the flavor while it was freezing and again while it was thawing. It was wonderful!

We love, love, love Lawry's Teriyaki Marinade with pineapple juice. It is wonderful. It is great on kabobs with chicken, mushrooms, onion and pineapple chunks. It's a time consuming recipe but it is so good on the grill.

That is brilliant! My local store has boneless skinless breasts on sale for under two dollars. I plan on stocking up on twenty pounds. I think I'll whip up a few marinades and try your trick. I have a feeling that it will become park of my usual routine!
