Kitchen tips that help me

As much as I would love to try Once a Month Cooking, I never seem to actually do it. Either I don't have the money to buy in bulk at the time, or I don't have the time. What I have found works best for me is to make sure that I have a few meals in the freezer at all times. Sometimes this means making double of a meal and freezing one. I typically do this with lasagna and Sausage Rigatoni Bake. Other times I spend an hour cooking things specifically for the freezer. I sually will make meatballs (later I will just have to make the sauce and pasta for Swedish Meatballs), meatloaf, Porcupine Scramble, or homemade Mac n Cheese. I enjoy cooking and like the time by myself in the kitchen fixing dinner (K is usually home from school when I start dinner). Those nights he is not home, or we are walking in the door right around dinner time, it works for me to have a meal ready either to cook or eat. Having a few meals in the freezer for this purpose has been a life saver for me.

I haven't been very successful at the Once a Month Cooking either. I like your idea of making double of a meal and freezing one portion.

I don't do the OAMC thing because a)I don't have time either and b)I actually like doing prep work. But there are nights I just plain am not up to cooking, so I've been trying to make at least one meal a week to put in the freezer. It's just as easy to brown 4 pounds of ground beef as 2, and nothing to add spices. Came in handy Monday--all I had to do was thaw out the meat, mix it with pasta, put cheese on top and we had a taco casserole!

I don't do the once a month cooking either, I'm no good at keeping up with that. Great tips...the Porcupine Scramble sounds very interesting, do you have a recipe? Thanks for sharing! =)

Tried once a month cooking too - it took me three days. Now I don't have any room in the kitchen or freezer to even attempt it, so I do what you do - double or triple the recipe and freezer the extras. Works so much better for me too!

I started freezing a meal or two here and there when I was pregnant with #3 and liked it so much I contined doing it. I am glad I am not the only one!

I've always wanted to try OAMC but we don't have an extra freezer... so it will have to wait. In the meantime, I do what you're doing. I always make sure to have a few frozen things in the freezer and it comes in handy just about every week.
